Ambrose Spike was a male Cellarhog of Redwall Abbey. He was the second cousin twice-removed of Rosey Spike. In addition to brewing various ales, Ambrose was known for performing magic and legerdemain.

While warning the Vole family about Cluny the Scourge Ambrose was stabbed by some of Cluny's rats, but survived and was rescued by Foremole and his crew.

Ambrose wasn't very good at cooking and later in Mattimeo his title was High Keeper of the Cellar Keys. He helped to defend Redwall against General Ironbeak and his army.

During the Winter of the Deepest Snow, Ambrose brewed a pink wine he dubbed the Cup of Cheer. Within the firkin, Fermald hid one of the Tears of all Oceans.)
